Vegan Quinoa Sushi

Vegan Quinoa Sushi!? Say what?? And to think the only way to eat sushi was just with rice!? Its vegan AND made with quinoa?? This should be good. 

Indeed it is! I am here to show a new way of spicing up your sushi game. This is a no brainer food bucket list recipe! Let's give it a try.






Vegan Quinoa Sushi


You can use any veggies you like for this recipe! These are just the ingredients I used. You can use whatever you have in the fridge!




It will come out fantastic however you choose to dress up your Quinoa sushi rolls!



Ingredients: 

5 Sushi Nori sheets ( I used gimme brand)

Any vegan meat (I used Tofurky Italian Sausage)

1 cup cooked Quinoa

1 tsp salt and spices 

1 T Vegenaise

1 T olive oil 

1/2 cup Kimchi  

1/2 cup tomatoes

1/2 cucumber

1/2 cup carrots


1 Sushi rolling mat






Directions:


  • Cook your quinoa and let cool for 20 mins.  
  • Prepare your veggies! Cut tomatoes, cucumber, carrots and vegan meat into long, thin match stick like pieces. (Julienne) 

  • Mix together Quinoa, vegenaise, olive oil, salt and spices into a bowl. Consistency should be thick and should stay together without falling apart.
  • Place nori sheet onto bamboo rolling mat. Starting with a thin layer of Quinoa evenly spread on sheet, then lay your veggies on top and roll!
  • Carefully slice your rolls into bite size pieces with a sharp knife. 

  • Serve and enjoy!






Optional topping sauce for your Sushi: 

There are many different sauces you can use to dip your sushi in. I decided to whip up my own topping with the ingredients I had in my fridge! 



Dressing ingredients:

You can either use a mortar and pestle or a small blender to mix up your ingredients. 

1/2 Avocado

1/4 cup hempseeds

2 tbsp tahini or sesame seeds

1 tbsp lime juice

1 tbsp rice wine vinegar

Salt to taste 


Mix and drizzle on top of sushi!
